Zucchini and Watercress Soup
The mellow, smoothness of zucchini provides a subtle counterbalance to the underlying sharp, peppery flavor of watercress leaves

 Cucumber, Radish and Melon Salad
A wonderful combination of fruit, vegetables and crunchy almonds mixed with a honey-walnut dressing

 Pesto and Goat Cheese Croutons
Crusty French bread toasted and topped with a sun-dried tomato pesto and goat cheese

 Spinach and Parmesan Risotto
Tender leaves of baby spinach and grated parmesan add extra flavor to this creamy textured dish

 Chicken Breast Stuffed with Apples and Brie
The sweet, tart flavor of apples paired with smooth, buttery flavors of brie baked into an 8 ounce breast of chicken served with fresh green beans

 Honey Glazed Peach Tart
A light crust filled with fresh peaches flavored with honey, almond and lemon topped with a mascarpone cream
